Dry vs Liquid Measurements: Why They Are Not Interchangeable

Most home kitchens have two types of measuring cups: a set of nested dry measuring cups (1 cup, ½ cup, ⅓ cup, ¼ cup) and a clear liquid measuring pitcher with volume markings. Why Dry and Liquid Cups Are Different

What Counts as Dry vs Liquid

Spoon or scoop them in, press down to eliminate air pockets, and level off. If you use a liquid measuring cup, you will likely include air gaps and undermeasure.

Brown sugar is a special case: recipes almost always say 'packed' or 'unpacked.' Packed brown sugar means pressing it firmly into the dry cup until it holds the cup's shape when turned out. Unpacked (rarely specified) means lightly spooned and leveled. The difference can be 20–40 g per cup. If a recipe does not specify, assume packed.
